BOTTS’S BRUNSWICK STEW

SHELLI HEGLER (Lowrenceville, Georgia) shares that every Christmas Eve her family gathered together at the home of her great-grandmother, ROSA MAE LONG BOTTS (Banks, Alabama), for the annual Christmas barbecue. Shelli says, “While the men slow-cooked the Boston butts over hickory coals just outside the field barn, the women would be getting the Brunswick stew, side dishes, and desserts ready for ‘the feast’ that took place around two o’clock. As kids, we spent our time going back and forth between the barbecue pit and the kitchen, trying to sneak tastes of all the delicious dishes. After everyone had eaten and we had opened gifts from whoever drew our name that year, we all went out into the field and shot off fireworks. My parents have taken over the tradition of hosting the annual Christmas barbecue and the guests have expanded to include any family and friends who can join us.”

2 cups pulled, chopped chicken

2 cups pulled pork

2 onions, chopped

2 cans (15.25 ounces each) corn

2 cups cooked okra

2 cans (14.5 ounces each) diced tomatoes

2 cups cooked lima beans

1 stick butter

3 cups chicken broth

1 teaspoon Tabasco sauce (optional)

1/8 teaspoon salt

1/8 teaspoon black pepper

1 In a large heavy saucepan or Dutch oven, combine the chicken, pork, onions, corn, okra, tomatoes, lima beans, butter, broth, Tabasco sauce (if desired), salt, and pepper. Cook over low heat, stirring frequently to prevent scorching, until the stew is thick enough to eat with a fork, about 2 hours.

MAKES 10 TO 12 SERVINGS.
